White Wine Chicken in Slow-Cooker- Guest Post

Ashley, the Healthy Mom who runs the Junk Food Kids web-site, has a great slow-cooker recipe (and I love, love, love to slow-cook!). White Wine Chicken

Ingredients:
3 boneless, skinless chicken breasts
4 ounces prosciutto (cut into small pieces)
1/2 cup of wine
1/4 of a medium yellow onion
1/2 cup of milk
1 teaspoon of cornstarch
one box of penne pasta
salt and white pepper to taste

Directions:
Put the chicken and sliced prosciutto in the crock pot.
Puree the onion in white wine until smooth, then add the puree, salt, and pepper, to the chicken/prosciutto and cook on low for six hours.

Remove and shred the chicken.
Add the milk and cornstarch to the sauce left in crock pot and stir.
Return the shredded chicken to the sauce mixture in the crockpot.
Boil penne to al dente and drain, then add the shredded chicken sauce mixture over the pasta to serve.

Makes great left-overs, and your kids don't know this tasty dish is good for them either!

  6. Morgan, crockpot chicken added to the pasta would be a good way to go *wink*...never thought of it for after church. Usually after church we go out for breakfast (because we can't eat before going to church, against the rules for us)
