Sugar Cookies! Christmas Recipe

Ingredients:

2 1/2 cups flour
8 ounces butter
1/2 cup powdered sugar
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
1/2 teaspoon baking soda

Preheat oven to 375 degrees. Blend butter and all sugar together in a bowl until creamy. Add egg and vanilla and mix well. Mix in flour and baking soda.

Make one inch round balls out of dough, and place on ungreased cookie sheet. Bake for about eight minutes, and let stand for a few minutes before removing from cookie sheet.

If you would like to decorate the cookies or add a design on top (maybe red and green colored sugar for Christmas?), flatten out the dough balls a bit before baking (using the bottom of a bowl or cup, gently press down on dough balls until cookie shaped), decorate, then bake as above.

These are easy and fun to make with small children. My cousin has two young ones that love to bake with her every year around the holidays (they especially love to lick the bowl after and decorate the cookies), and sugar cookies are one of their favorite recipes.

My younger sis always substitutes almond extract flavoring for the vanilla in her sugar cookies, and I like to substitute anise extract and double or triple the amount because then my sugar cookies taste like black licorice. The anise flavoring is clear so it doesn't change the color of the cookies. I love sugar cookies that are made using the powdered sugar instead of granulated sugar.
