Delicious Crockpot Chili

Ingredients

1 1/2 pounds ground beef
2 cups tomatoes diced (or one can organic diced tomatoes)
1 cup chopped onion
1/2 cup chopped green bell pepper
1 carrot chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon coriander
1 garlic clove, minced
1 can kidney beans (about 2 cups), drained and rinsed
1/2 cup water or beef broth
salt and pepper

Cook the ground round in a large skillet over medium heat until browned. Add in the remaining ingredients except for beans, and mix. Place mixture into slow cooker, add water or broth, and stir in beans. Cook on low for 5 hours.

This is one of my husband's favorite treats. It's yummy served in taco shells, with sour cream, cheddar cheese and lettuce toppings, or serve with some nachos on the side for a family treat during the cold winter nights that are coming. Chili is always a delicious treat!
